  • ½ cup unsalted butter (room temperature)
  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda

  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating
  • ½ cup unsalted butter (room temperature) for filling
  • 1 ¼1 ½ cups powdered sugar (sifted) for filling
  • 1 pinch of salt for filling
  • 4 ½ ounces cream cheese (room temperature) for filling
  • 3 tablespoons butter (room temperature) for filling
  • 2 tablespoons brown sugar (light or dark) for filling
  • 2 cups powdered sugar (sifted) for filling
  • ½ teaspoon vanilla extract for filling

Instructions

  1. Preheat oven to 350°F. Reduce apple cider in a saucepan until it’s 1/4 cup.
  2. Sift together flour, baking powder, baking soda, salt, and spices in a bowl.
  3. Cream butter with sugars until fluffy; add eggs and vanilla.
  4. Mix reduced apple cider into the batter with apple butter or applesauce.
  5. Scoop mounds onto baking sheets; bake for 11–13 minutes until springy.
  6. Cool cookies and coat in cinnamon sugar before filling with your choice of frosting.
