  • ½ cup all-purpose flour (for streusel topping)
  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel topping)
  • ¼ teaspoon salt (for streusel topping)
  • ¼ cup cold unsalted butter (for streusel topping, cubed)
  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel topping by mixing flour, brown sugar, oats, cinnamon, and salt in a bowl. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and granulated sugar until fluffy. Add eggs one at a time and mix in vanilla.
  5. Alternate adding dry ingredients and milk to the creamed mixture until just combined.
  6. Fold in diced apples gently.
  7. Fill muffin cups two-thirds full with batter and sprinkle with streusel topping.
  8. Bake for 22–25 minutes until golden and a toothpick comes out clean.
  9. Cool completely before frosting with cream cheese mixture.
