  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Instructions

  1. In a bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey for the sauce.
  2. Soak chicken tenderloins in buttermilk for at least 10 minutes.
  3. Prepare a breading station with flour mixed with cornstarch, garlic powder, salt, and pepper in one bowl; whisked egg and Sriracha in another; and panko breadcrumbs in a third.
  4. Bread each tenderloin by dipping in flour mixture, then egg mixture, followed by panko breadcrumbs.
  5. Heat canola oil in a skillet over medium-high heat and fry the chicken until golden brown on both sides (about 3 minutes per side).
  6. Drain on paper towels and drizzle with the bang bang sauce before serving.
