  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 8 oz cream cheese (room temperature)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin pan with paper liners.
  2. In one bowl, whisk together flour, pumpkin spice, baking soda, and salt. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually mix dry ingredients with wet ingredients until just combined.
  3. In a separate bowl, beat cream cheese until smooth; add sugar, egg yolk, and vanilla extract.
  4. Fill muffin tins three-quarters full with batter and top with cream cheese mixture. Use a toothpick to swirl gently.
