  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 32 ounces cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. In another bowl, beat softened cream cheese and sugar until smooth.
  4. Add sour cream and vanilla; mix until combined. Then add eggs one at a time while mixing gently.
  5. Fold in rainbow jimmies and pour the mixture over the crust.
  6. Bake for about 60 minutes until set around edges but slightly wobbly in the center.
  7. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours or overnight.
  8. Before serving, top with whipped cream and extra jimmies.
