  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons apple cider vinegar
  • 4 salmon filets (about pounds, skins on)
  • 2 medium peaches (pitted, thinly sliced)
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a medium bowl, mix peach preserves, olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes.
  2. Reserve half of the marinade for later use. Place the salmon filets in a resealable bag and coat them with the remaining marinade. Let marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated salmon filets skin-side up for 2-3 minutes until golden brown.
  5. Flip the salmon skin-side down and add sliced peaches around them in the skillet.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake for about 12-15 minutes or until internal temperature reaches 145°F.
  8. Serve immediately with fresh parsley garnish.
