  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add cubed chicken and Cajun seasoning; cook until browned and cooked through (about 5–7 minutes). Remove chicken from skillet.
  4. In the same skillet, sauté onion, bell pepper, and garlic for about 3–4 minutes until softened.
  5. Stir in cream cheese until melted, then add heavy cream and chicken broth to create a rich sauce.
  6. Mix in cheddar cheese, Parmesan cheese, paprika, salt, and pepper until smooth.
  7. Return chicken to skillet along with drained pasta; mix thoroughly.
  8. Transfer mixture to a greased baking dish and bake for about 20–25 minutes until golden on top.
