  • 2 cans (15 ounces each) chickpeas, rinsed and drained
  • 1 ripe avocado
  • 4 large tortillas or wraps
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • 2 tablespoons water (or more, to desired consistency)
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Cut the cauliflower into bite-sized florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Roast for about 25 minutes until golden brown.
  2. In a bowl, mix rinsed chickpeas with diced red onion, chopped cilantro, lime juice, olive oil, chili sauce, chili powder, cumin, garlic powder, and salt.
  3. For the avocado crema, blend the avocado with Greek yogurt (or a vegan alternative), lime juice, water for desired consistency, and salt until smooth.
  4. To assemble wraps: Place roasted cauliflower and chickpea mixture on tortillas; drizzle with avocado crema and any additional toppings before rolling up.
