  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine vanilla wafer crumbs, brown sugar, and melted butter. Press into a pie dish.
  2. Bake the crust for about 10 minutes until set. Cool completely.
  3. In another bowl, beat together mascarpone, confectioner’s sugar, vanilla extract, ground cinnamon, lemon zest, and ricotta until smooth.
  4. Whip heavy cream until stiff peaks form. Fold half into the cheese mixture along with most chocolate chips.
  5. Spoon filling into cooled crust and top with remaining whipped cream and chocolate chips.
  6. Cover and refrigerate for at least 8 hours or overnight before serving.
