  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup sugar (for custard)
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast; mix briefly.
  2. Add beaten eggs and knead for about 2-3 minutes until thick.
  3. Gradually incorporate softened butter, kneading for about 20 minutes until dense and sticky.
  4. Cover the dough and let it rise in a warm spot for about 2 hours until doubled in size.
  5. For the custard, heat milk and butter with the vanilla pod until bubbling; remove from heat.
  6. Whisk egg yolks with sugar, cornstarch, and flour; gradually add hot milk mixture while whisking.
  7. Return to low heat until thickened; cool completely before spreading on dough.
  8. Roll out dough, spread cooled custard, sprinkle chocolate chips, fold over, cut into rectangles.
  9. Let rise again for about 2 hours until puffy, then bake at 350°F (180°C) for 10-12 minutes until golden brown.
  10. Brush with warm sugar syrup after baking.
