  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix the sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry mixture until just blended.
  5. Fold in the grated zucchini and optional nuts.
  6. Pour the batter into the prepared pan.
  7. For the streusel topping: mix flour, sugars, cinnamon; cut in butter until crumbly.
  8. Sprinkle topping over batter and bake for about 50-60 minutes or until a skewer comes out clean.
  9. Cool for about 10 minutes before transferring to a wire rack.
