  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small white onion, diced
  • 1 bay leaf
  • 1½ tablespoons Old Bay seasoning
  • 14-ounce can unsweetened coconut milk
  • Fresh kale, roughly chopped

Instructions

  1. Prepare the vegetables by dicing them into uniform pieces for even cooking.
  2. In a large pot, bring vegetable stock to a gentle boil with uncooked wild rice; reduce heat to simmer until rice is tender.
