  • 2 tablespoons olive oil
  • 1 pound ground turkey sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in well-salted boiling water until al dente; reserve some pasta water before draining.
  2. In a large skillet over medium-high heat, warm olive oil and brown the ground turkey sausage until fully cooked.
  3. Reduce heat to medium, add minced garlic, and sauté until fragrant. Stir in chopped sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. Pour in heavy cream and allow to simmer until thickened; then mix in Parmesan cheese and baby spinach until combined.
  5. Toss the cooked penne into the skillet with the sauce and add reserved pasta water as needed for desired consistency.
  6. Serve hot with torn basil leaves on top if desired.
