  • 1 cup sweet potato flour
  • 1 cup cornstarch
  • 34 cups vegetable oil (for frying)

Instructions

  1. Marinate the chicken: In a bowl, mix garlic, vinegar, soy sauce, salt, white pepper, garlic powder, five spice powder, bouillon powder, and sugar. Add chicken pieces and ensure they are well coated. Marinate for at least 30 minutes (preferably longer).
  2. Prepare the coating: In another bowl, combine sweet potato flour, cornstarch, salt, white pepper, paprika, and five spice powder.
  3. Coat the chicken: After marinating, coat each piece of chicken thoroughly in the flour mixture.
  4. Heat the oil: In a deep skillet or pot over medium-high heat, heat vegetable oil until it reaches about 350°F (175°C).
  5. Fry the chicken: Carefully add coated chicken pieces in batches and fry until golden brown and cooked through (6-8 minutes per batch). Avoid overcrowding the pan.
