  • 3 boneless chicken breasts
  • 1 tablespoon minced garlic
  • 1 can crushed tomatoes (28 oz)
  • 1 can tomato sauce (15 oz)
  • 4 cups chicken broth
  • 1 cup freshly shaved parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz uncooked rotini pasta
  • 1½ cups shredded mozzarella cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • ½ cup bread crumbs
  • 1 tablespoon butter

Instructions

  1. Place chicken breasts in the crock pot with minced garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  3. Shred the chicken in the pot with two forks. Stir in parmesan cheese, heavy cream, and uncooked rotini pasta. Cover and cook on low for an additional 30 minutes or high for 15 minutes.
  4. While cooking, melt butter in a saucepan over medium heat and sauté bread crumbs until golden brown.
  5. Serve the soup topped with mozzarella cheese and sautéed bread crumbs.
