  • 2 pounds ground beef (or ground chicken)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 ounces crushed fire roasted tomatoes
  • 8 ounces tomato paste
  • 2 cups shredded cheddar cheese
  • 6 ounces cream cheese, at room temperature
  • 23 cups chicken or beef broth (adjust based on your desired thickness)
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt for serving

Instructions

  1. Brown the ground beef in a skillet until no longer pink. Drain excess grease.
  2. Sauté chopped onions and poblano peppers in the same skillet until softened.
  3. In the crockpot, combine browned beef, sautéed vegetables, crushed tomatoes, tomato paste, hot sauce, butter, spices, broth, cream cheese, and cheddar cheese. Stir well.
  4. Cover and cook on low heat for about 2 hours.
  5. Stir in mixed chili beans and remove bay leaves before serving.
