  • 1 cup clam juice
  • 1 cup 2% milk
  • 2 cups heavy cream
  • 34 teaspoons Old Bay seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon dry mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons dry apple juice
  • 2 tablespoons lemon juice (optional)
  • Chopped parsley (for garnish)

Instructions

  1. Melt butter in a large pot over medium heat. Sauté finely chopped shallots until translucent.
  2. Sprinkle in flour, stirring continuously for about two minutes until lightly golden.
  3. Gradually add clam juice, stirring well. Follow with milk and heavy cream, mixing until smooth.
  4. Stir in Old Bay seasoning, garlic powder, dry mustard, salt, and pepper; taste and adjust as needed.
  5. Gently fold in lump crabmeat and let simmer on low heat for about ten minutes.
  6. Remove from heat; stir in dry apple juice and lemon juice if desired. Serve hot, garnished with chopped parsley.
