  • 1 ½ tsp Baking soda

  • 2 large Eggs (room temperature)
  • ½ cup Vegetable oil (neutral-flavored)
  • 1 cup Buttermilk (room temperature)
  • 1 cup Hot coffee (enhances chocolate flavor)
  • 8 oz Semisweet chocolate (melted and cooled)
  • 2 cups Heavy whipping cream (cold)
  • 1 tbsp Powdered sugar
  • 1 tsp Vanilla extract
  • 6 oz Bittersweet chocolate (finely chopped)
  • ¾ cup Heavy cream (heated)
  • 1 tbsp Light corn syrup (for shine)
  • 1 tbsp Butter (room temperature)

Instructions

  1. Preheat your oven to 350°F and lightly grease your cake pans.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, and hot coffee; mix well.
  4. Fold the wet ingredients into the dry mixture until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool on wire racks.
  6. For the mousse, melt semisweet chocolate and let cool slightly before folding it into whipped cream mixed with powdered sugar and vanilla.
  7. Layer the cooled cakes with mousse in between; chill for at least 3 hours.
  8. Prepare the ganache by heating heavy cream and pouring it over chopped bittersweet chocolate; stir until smooth and glossy.
  9. Spread ganache over chilled cake before serving.
