  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15oz) can pumpkin puree
  • 1 tsp vanilla extract
  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 2/3 cup water
  • 1/2 cup butter, cold and cubed
  • 3/4 cup all-purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4-inch loaf pans.
  2. In a bowl, mix flour, salt, baking soda, and spices.
  3. Combine granulated and brown sugars into the dry mixture.
  4. Add canola oil and mix until combined.
  5. Incorporate eggs one at a time until fluffy.
  6. Stir in pumpkin puree, water, and vanilla until smooth.
  7. Divide batter between prepared pans and prepare the crumb topping by mixing flour, brown sugar, cinnamon, and cutting in cold butter until crumbly.
  8. Sprinkle crumb topping over batter.
  9. Bake for 55–65 minutes or until a toothpick comes out clean.
  10. Cool for 10 minutes before transferring to a wire rack.
