  • 3 pounds yellow onions
  • 6 tablespoons unsalted butter
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 3/4 cup dry white grape juice
  • 1/4 cup all-purpose flour
  • 1/2 baguette
  • 2 ounces Gruyère cheese (about heaping 1/2 cup)
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 1 teaspoon dried thyme
  • 2 dried bay leaves
  • 2 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice onions thinly and melt 4 tablespoons of butter in a large pot over medium heat. Add onions, thyme, bay leaves, salt, and pepper. Cook until caramelized (30-40 minutes).
  2. Stir in chopped carrots, celery, and minced garlic; cook for another few minutes.
  3. Add chicken to the pot along with grape juice; simmer for about 20 minutes until cooked through.
  4. Remove chicken, shred it, then mix flour with some broth until smooth and add back to the pot with shredded chicken.
  5. Pour in remaining broth; cook an additional 10-15 minutes before serving hot with toasted baguette slices and melted Gruyère cheese.
