  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Pâte Sucrée dough and cut into portions. Press into tartlet pans.
  2. Chill shells for 15-30 minutes, then preheat oven to 375°F.
  3. Bake shells for 10-15 minutes until golden; let cool.
  4. Make strawberry jam by cooking chopped strawberries and sugar until thickened.
  5. Prepare pastry cream by simmering sweetened condensed milk, whole milk, and heavy cream, then temper egg yolks before thickening on the stovetop.
  6. Refrigerate pastry cream for about two hours, then whisk before assembling.
  7. Spread strawberry jam in each cooled shell, pipe pastry cream on top, and garnish with halved strawberries.
