  • 3 bell peppers
  • 1 pound ground chicken breast
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese (plus more for topping)
  • 2 tablespoons fresh dill
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 350°F.
  2. Cook the rice according to package instructions.
  3. Cut each bell pepper in half horizontally and remove seeds.
  4. In a skillet, heat olive oil over medium heat; add ground chicken, salt, and pepper. Cook until no longer pink.
  5. Stir in Italian seasoning, onion, garlic, and zucchini; sauté for two minutes until fragrant.
  6. In a bowl, combine cooked rice with the chicken mixture, tomatoes, olives, feta cheese, and dill.
  7. Stuff each pepper with the filling and place cut-side up in a baking dish. Add water to the dish for steaming.
  8. Cover with foil and bake for 40–45 minutes. Squeeze lemon juice before serving.
