  • 2 cups milk (divided)
  • 1/4 cup unsalted butter
  • 3 tablespoons flour
  • 3/4 teaspoon granulated garlic
  • 1/8 teaspoon black pepper
  • 2 2/3 cups white cheddar cheese (freshly shredded)
  • 2/3 cup Pecorino Romano or Parmesan (freshly grated)
  • Salt (to taste)

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain without rinsing.
  2. In a blender, combine fresh spinach with half a cup of milk and blend until smooth.
  3. In a medium saucepan over medium heat, melt butter. Stir in flour, garlic powder, and black pepper until combined.
  4. Gradually add remaining milk and the spinach mixture while stirring continuously until smooth.
  5. Simmer the sauce for one minute on low heat, stirring constantly.
  6. Add both types of cheese gradually until melted and well combined.
  7. Mix the cooked macaroni into the cheese sauce until evenly coated.
