  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 tsp garlic, minced
  • 1 lb ground turkey
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 4 cups beef broth (or vegetable broth)
  • 28 oz can fire-roasted crushed tomatoes
  • 15 ounce can kidney beans, rinsed and drained
  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can pinto beans, rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onions and minced garlic; sauté for about 3-4 minutes until softened.
  2. Stir in ground turkey and cook for 5-7 minutes until fully browned.
  3. Mix in chili powder, cumin, salt, pepper, brown sugar, and tomato paste; combine well.
  4. Pour in beef broth and crushed tomatoes; add all the beans. Stir thoroughly, scraping the bottom of the pot.
  5. Bring to a boil, then reduce heat to low and let simmer for about 30 minutes, stirring occasionally.
