  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear chicken in a skillet over medium heat for 3–4 minutes per side until golden brown; set aside.
  3. Mix BBQ sauce and honey in a bowl while toasting uncooked rice in the same skillet for about 1–2 minutes.
  4. Add chicken broth and half of the BBQ mixture to the skillet; stir well.
  5. Return chicken to the skillet and pour remaining sauce over it; cover tightly.
  6. Simmer on low heat for about 15 minutes; add mixed vegetables if using and cook for an additional 5 minutes until everything is tender.
  7. Let sit covered for 5 minutes before serving; garnish with green onions.
