  • 4 4-6 ounce salmon filets
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup edamame (cooked)
  • 1/2 cup sriracha mayo

Instructions

  1. Cut your salmon into 1-inch cubes. Removing the skin is optional.
  2. In a large bowl, whisk together soy sauce (or tamari), honey, sriracha, minced garlic, and water.
  3. Add your cubed salmon to the bowl and coat it well with the marinade. Ideally, let it marinate for at least 20 minutes.
  4. Heat a large skillet over medium-high heat with a splash of oil. Add in your marinated salmon cubes.
  5. Once your salmon has that golden color, pour in the reserved marinade and cook until it thickens slightly.
  6. Start with a bed of cooked white rice as your base. Top with the cooked salmon cubes, slices of avocado, cucumber rounds, and cooked edamame.
  7. Drizzle some sriracha mayo over everything and garnish with red pepper flakes and sesame seeds before serving.
