  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper to create the dry rub.
  3. Coat chicken thighs evenly with the dry rub and set aside.
  4. In a large oven-safe sauté pan over medium heat, sear the seasoned chicken thighs until browned on both sides.
  5. Sauté chopped cabbage in the same pan until slightly wilted.
  6. Add sliced potatoes, onions, and chicken stock; mix well.
  7. Arrange seared chicken on top and bake for 45–50 minutes until everything is tender and chicken reaches an internal temperature of 165°F (75°C).
