  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella (or shredded firm mozzarella)
  • Additional lemon juice and parmesan cheese for topping

Instructions

  1. Prepare your dough by following the easy no-knead pizza recipe up to step 5.
  2. If using fresh mozzarella packed in water, slice it into thick pieces and pat dry to remove excess moisture.
  3. Shape your dough on parchment paper into a rectangle (9×13 inches) and transfer it to a pizza peel or rimmed baking sheet.
  4. In a glass jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper; shake well to mix.
  5. Dimple the dough and drizzle the brine over it. Top with mozzarella pieces.
  6. Bake on a preheated pizza stone for about 8-10 minutes until golden.
  7. Drizzle with fresh lemon juice and sprinkle parmesan cheese before serving.
