  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Sauté chopped onion in olive oil over medium heat until translucent, then add garlic.
  2. Stir in chopped tomatoes and spices; simmer until sauce thickens.
  3. Add canned beans and veggie broth; stir gently to combine.
  4. Cook on low heat for 25 minutes on stovetop or seal and cook on high pressure for 10 minutes in an Instant Pot.
  5. Adjust consistency with more broth if needed, taste, and season accordingly.
