  • 4 boneless, skinless chicken breasts
  • 1 yellow onion, chopped
  • 1 jalapeño, diced
  • 4 cups chicken bone broth
  • 1.5 cups sour cream
  • 2 cups frozen sweet white corn
  • 4 cloves of garlic, minced
  • Fresh cilantro, chopped
  • Juice of 1 lime
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • Olive oil

Instructions

  1. Heat olive oil in a pot over medium-high heat. Sauté onion and jalapeño for around 5 minutes until softened.
  2. Add garlic, chili powder, and oregano; stir for another minute.
  3. Pour in chicken broth and add chicken breasts. Season with salt and pepper; bring to a boil. Simmer covered for about 10-15 minutes until chicken is cooked.
  4. Shred the chicken and return it to the pot.
  5. Stir in sour cream, shredded cheese, cilantro, corn, and lime juice.
  6. Mix cornstarch with water and add to the pot; simmer uncovered for another 10 minutes to thicken.
  7. Serve hot with your choice of toppings.
