  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract until well mixed.
  2. If the mixture is too dry, gradually add unsweetened almond milk until it reaches a moldable consistency.
  3. Gently fold in the mini dark chocolate chips.
  4. Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used.
  5. Place the balls on a parchment-lined baking sheet and refrigerate for at least 20 minutes to firm up before serving.
