  • 11.5 lbs Fresh whole lobsters
  • 1 cup Cornstarch
  • 2 tbsp Ginger
  • 4 stalks Scallions
  • 3 cloves Garlic
  • 3 tbsp Dry apple juice
  • 2 tbsp Low-Sodium Soy Sauce
  • 1 tbsp Sugar
  • 1 cup Chicken Bouillon
  • 1 tsp Ground White Pepper
  • 2 cups Neutral Oil
  • 1 tbsp Sesame Oil

Instructions

  1. Bring a large pot of salted water to boil. Add live lobsters and cook until bright red (about 8-10 minutes). Remove and let cool before cracking open.
  2. In a bowl, mix cornstarch with salt. Dredge lobster pieces until well-coated.
  3. Heat neutral oil in a skillet over medium-high heat and fry coated lobster pieces until golden brown (about 2-3 minutes per side).
  4. In another pan, combine ginger, garlic, scallions, dry apple juice, soy sauce, sugar, bouillon, white pepper, and salt. Cook until fragrant (about 2-3 minutes).
  5. Toss fried lobster pieces into the sauce until coated and simmer briefly.
  6. Serve on a platter drizzled with sesame oil.
