  • 2 large eggs (room temperature)
  • 1 cup whole milk (room temperature)
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt.
  3. In another bowl, beat the eggs and mix in milk, melted butter, vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined—don’t overmix!
  5. Pour half of the batter into the prepared pan and sprinkle half of the brown sugar mixed with cinnamon on top. Add the remaining batter and finish with any leftover sugar-cinnamon mixture.
  6. Bake for about 50–60 minutes or until a toothpick inserted comes out clean. Allow to cool slightly before transferring to a wire rack.
