  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cups canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, combine the canola oil, granulated sugar, light brown sugar, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Allow to cool before preparing the cream cheese frosting by beating together cream cheese, butter, vanilla extract, and powdered sugar until smooth.
  7. Once cooled, generously frost the pumpkin bread and enjoy!
