  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large egg yolks (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup finely chopped chocolate bar or chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.
  2. In a large pan, brown the cold butter over medium heat until golden and nutty; cool in the fridge until about 75°F.
  3. Dry the pumpkin puree using paper towels to remove excess moisture.
  4. Whisk together cooled butter, granulated sugar, and brown sugar until combined.
  5. Add egg yolks, vanilla, and pumpkin puree; mix well.
  6. Gently fold in flour, pumpkin spice, baking soda, salt, and chocolate chips until just combined.

  8. Bake for 9-13 minutes until edges are golden and centers are slightly underbaked; shape with a cookie cutter if desired.
  9. Cool on wire racks before enjoying.
