Ingredients

  • Mini pumpkins or ramekins
  • Heavy cream
  • Granulated sugar
  • Egg yolks
  • Vanilla extract
  • Pumpkin puree
  • Ground cinnamon

  • Salt

Instructions

  1. Prepare your mini pumpkins by cutting off the tops and scooping out the seeds, or set aside ramekins.
  2. Whisk egg yolks and granulated sugar in a bowl until pale and slightly thickened. Heat heavy cream until steaming, then slowly combine with the egg mixture while whisking.
  3. Stir in pumpkin puree, vanilla extract, cinnamon, ginger, and salt until well blended.
  4. Pour custard into prepared pumpkins or ramekins and place them in a baking dish filled with hot water. Bake at 325°F (163°C) for about 30 minutes until set but slightly jiggly.
  5. Cool at room temperature before chilling in the fridge for at least two hours.
  6. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
