  • 12 slices Texas toast (or French bread, challah, or croissant halves)
  • 1/2 cup butter (room temperature)
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup (or honey)
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Heat a large non-stick skillet over medium heat and add a small amount of butter.
  2. In a rectangular baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until smooth.
  3. Dip each slice of bread into the egg mixture, coating both sides before placing them on the skillet.
  4. Cook until each side is golden brown (about 2-3 minutes).
  5. For the whipped pumpkin butter: Beat softened butter in a bowl until fluffy; mix in pumpkin puree, maple syrup or honey, vanilla extract, cinnamon, and pumpkin pie spice.
