  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a pot, cook diced pumpkin in vegetable stock until tender (10-15 minutes).
  3. Cook gnocchi in salted boiling water until they float; drain.
  4. Mash cooked pumpkin and mix in dairy cream and crumbled cheese until smooth.
  5. Fold in cooked gnocchi and sage leaves gently.
  6. Transfer mixture to a baking dish; top with mozzarella/cheddar and pecans.
  7. Bake for 20-25 minutes until golden brown.
