  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare your baking dish.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Add melted butter and combine.
  3. Press two-thirds of the mixture into the bottom of the dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour pumpkin filling over the crust and sprinkle remaining crumble on top.
  6. Bake for 30-35 minutes until golden brown. Allow to cool before slicing.
