  • 2 teaspoons pumpkin pie spice

  • 1/2 cup very cold salted butter, diced or grated
  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk), plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons buttermilk (or milk)
  • 1/2 teaspoon vanilla extract
  • optional: 1/4 teaspoon ground cinnamon, ginger or cardamom

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in pumpkin purée, buttermilk, and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and gently shape into an inch-thick circle; cut into wedges.
  6. Place on the prepared baking sheet and freeze for 15 minutes.
  7. Brush tops lightly with buttermilk before baking for 13-15 minutes until golden brown.
  8. Cool slightly and drizzle with a mixture of powdered sugar, buttermilk, and vanilla extract.
