  • ½ Cup pumpkin puree
  • 1 large egg
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • Crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Fold in chocolate chips, mini vegan marshmallows, and crushed graham crackers.
  7. Scoop rounded tablespoons of dough onto prepared baking sheet, spacing them about 2 inches apart.
  8. Press additional chocolate chips and vegan marshmallows into each cookie ball before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers are still soft.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
