  • 400 g pumpkin puree
  • 230 g all-purpose flour

  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ⅛ tsp ground black pepper
  • 150 g unsalted butter (for frosting)
  • 160 g cream cheese
  • 220 g icing sugar
  • Orange food color
  • Pumpkin seeds (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pans.
  2. In a large bowl, mix white sugar, brown sugar, and eggs until combined. Add vegetable oil, pumpkin puree, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, nutmeg, ground cloves, and black pepper.
  4. Gently fold dry ingredients into wet mixture until just combined. Pour into pans and smooth tops.
  5. Bake for about 60 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before preparing frosting by beating butter and brown sugar until creamy; add cream cheese and icing sugar until smooth.
  7. Frost cooled cake layers and decorate with pumpkin seeds.
