  • ½ cup brown sugar (packed)

  • ½ cup pumpkin puree (blotted)
  • 1 egg yolk
  • 1 tsp pumpkin pie spice
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • 1½ cups white chocolate chips

Instructions

  1. Preheat oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. Blot pumpkin puree with a paper towel to remove excess moisture.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in blotted pumpkin puree, egg yolk, and pumpkin pie spice until fully combined.
  5. Fold in flour and baking soda until just mixed.
  6. Gently incorporate white chocolate chips into the dough.
  7. Scoop dough onto prepared baking sheets, spacing them two inches apart.
  8. Bake for 9 to 11 minutes until the edges are set and centers remain slightly gooey.
  9. Allow cookies to cool on the baking sheet for five minutes before transferring to a wire rack.
