  • 16 ounces ground turkey sausage (or chicken)
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounces refrigerated cheese and spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion for 3-4 minutes until soft; add minced garlic and Italian seasoning for another 30 seconds.
  3. Add ground turkey sausage, crumbling it as it cooks until browned.
  4. Stir in chicken broth, crushed tomatoes, ravioli, salt, and pepper; bring to a simmer.
  5. Cook ravioli for 3-5 minutes until al dente.
