  • 1 pound turkey sausage (or plant-based sausage)
  • 5 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook the turkey sausage until browned. Transfer to a plate.
  2. In the same pot, melt butter and sauté the mirepoix for about 5–7 minutes until tender. Add garlic and cook for another 30 seconds.
  3. Stir in the chopped potatoes, dried herbs, salt, pepper, and chicken stock; bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
  4. Meanwhile, in another pot, create a roux by melting remaining butter and whisking in flour for one minute. Gradually add milk until thickened.
  5. Combine both mixtures; stir in cheese until melted. Return cooked sausage to the pot and mix well.
  6. Serve warm with optional bread on the side.
