  • 1/4 cup calamansi juice (or lime juice)

  • 2 stalks lemongrass (chopped)
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • 1/4 cup annatto oil (for cooking)

  1. In a large bowl, combine vinegar, calamansi juice, soy sauce, garlic, ginger, lemongrass, brown sugar, salt, and pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least one hour or preferably overnight.
  3. Preheat your grill or oven to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess liquid to drip off. Brush each piece with annatto oil.
  5. Grill or bake the chicken for about 20-25 minutes per side until golden brown and cooked through.
