  • 14 oz Reese Hearts of Palm (drained, dried, and chopped)
  • 14 oz Reese Artichoke Hearts
  • 2 cloves garlic (minced)
  • 2 teaspoons fresh Italian parsley (minced)
  • 1 teaspoon Dijon mustard
  • 1 whole egg (lightly beaten)
  • 3/4 cup panko bread crumbs (plus more for coating)
  • Light extra virgin olive oil (for frying)

Instructions

  1. In a mixing bowl, combine hearts of palm, artichokes, garlic, parsley, Dijon mustard, egg, and panko bread crumbs. Mix well until combined.
  2. Form the mixture into small patties using about two tablespoons per cake.
  3. Coat each patty in additional panko bread crumbs.
  4. In a pan over medium heat, add olive oil and fry the cakes until golden brown on both sides, approximately 3-4 minutes per side.
  5. Transfer to paper towels to absorb excess oil and serve warm.
