  • 2 lbs large shrimp (peeled and deveined)
  • 20 oz refrigerated three cheese tortellini
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 1/3 cup dry apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 5 oz fresh baby spinach
  • 1/2 cup freshly grated Parmesan
  • 1 tbsp olive or grapeseed oil
  • 1 tbsp all-purpose flour
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. In a large skillet over medium-high heat, add olive oil and sear shrimp for 1-2 minutes per side until pink. Remove from skillet.
  3. Lower heat to medium-low; deglaze skillet with apple vinegar. Add butter and garlic; cook until fragrant.
  4. Stir in flour, then gradually whisk in chicken stock and cream cheese until smooth. Add heavy cream and basil; simmer for 5-7 minutes.
  5. Cook tortellini according to package instructions; drain.
