  • 150 g silken tofu
  • 100 g cream cheese (softened)
  • 3 large eggs (separated)
  • 50 g sugar
  • 20 g cornstarch
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a blender, combine silken tofu, softened cream cheese, egg yolks, sugar, cornstarch, lemon juice, vanilla extract, and salt. Blend until smooth.
  3. In a separate bowl, beat egg whites until soft peaks form. Gently fold them into the tofu mixture.
  4. Pour the mixture into a greased baking pan and bake for 40-50 minutes until edges are set and the center is slightly jiggly.
  5. Allow the cheesecake to cool at room temperature before refrigerating for at least two hours. Serve chilled with powdered sugar and fresh berries.
