  • 3 tbsp toasted sesame oil
  • 3.5 oz shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp freshly grated ginger
  • 4 cups chicken or vegetable broth
  • ½ tsp ground turmeric
  • 2 tbsp low sodium soy sauce
  • 1 can (14 oz) unsweetened coconut milk
  • 9 oz instant ramen noodles
  • Chili oil, sesame seeds, chopped chives, boiled eggs (for serving)

Instructions

  1. Prepare your ingredients by grating the garlic and ginger, and tearing the shiitake mushrooms into small pieces.
  2. In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add the shiitakes and cook until browned and crispy; set aside.
  3. Lower the heat and add another tablespoon of sesame oil along with garlic and ginger. Sauté until fragrant.
  4. Deglaze with chicken or vegetable broth, scraping up any brown bits from the bottom.
  5. Stir in turmeric, soy sauce, coconut milk, and lime juice; bring to a simmer.
  6. Add instant ramen noodles; cook according to package instructions.
  7. Serve in bowls topped with crispy mushrooms, chili oil, sesame seeds, chives, and boiled eggs.
